Blogmas Day 7: BLT Pasta Salad Recipe

How crazy is it guys that it's already the end of the first week of Blogmas?



I swear this whole week has gone by in warp speed, and I'm enjoying getting to post some things that I normally haven't been on my blog.

Today's post is going to be a recipe post, since everyone knows just how much I love cooking and baking period, and even more so during the holiday season.

One thing though, I've noticed that most Christmas cookbooks and/or recipe posts tend to focus on dishes for Christmas dinner or Christmas breakfast, but don't often include yummy easy dinners to make during the holiday season while we're all crazy busy trying to keep up with everything that needs to be done.

When I stumbled across this delicious sounding salad recipe on Pinterest from "Life In The Lofthouse" I knew it would be a perfect dinner for a busy day of getting Christmas baking, decorating, shopping, wrapping or any other type of errand done. It comes together super fast and easily, and is a hearty meal all on its own, without needing to serve anything alongside with it. Also, the colors in this salad just scream Christmas to me, and Neil and I both enjoyed this salad so much that I've already included it again in this month's meal plan.

You Will Need;

2 1/2 Cups Of Uncooked Pasta ( I used shells, but she used Bow Ties)
6 Cups Of Torn Romaine Lettuce
1 Medium Tomato, Diced
4 Bacon Strips, Cooked and Crumbled (I Substituted 1/4 Cup of Soy Imitation Bacon Bits Instead)
1/2 Cup Ranch Salad Dressing
1 Tablespoon Barbecue Sauce
1/4 Teaspoon Pepper


I started out with gathering all my ingredients together, and then got right into making the salad.

Here's the directions:

1) Cook Pasta According To Package Directions. Drain. Then Rinse Pasta Under Cold Water.

2) In A Large Bowl, Combine The Romaine Lettuce, Tomato, Pasta, And Bacon.

3) Drizzle The Ranch Dressing And Barbecue Sauce Over The Top. Gently Toss To Coat Evenly. Season With Pepper. Serve Immediately And Enjoy!






I was honestly surprised with just how easy this salad was to make, and I loved the addition of lettuce which is definitely not like any other pasta salad I've ever had before.

It was even pretty plated, and it was the perfect dinner to eat in front of our makeshift "fireplace." Lol we're currently in the process of trying to buy a fireplace for our living room but are having trouble finding one we like. So instead, we're doing this for now, and we'll hopefully find an actual fireplace soon!
